Our Club’s cuisine is at the heart of Guacalito’s culinary philosophy, which represents an unwavering commitment to make every meal an extraordinary Nicaraguan experience. Whether it’s the laid-back Tres Ceibas Beach Club, the formal elegance of La Mesa, or the beachfront experience of La Terraza, the most talented and experienced native hands give life to the cuisine. Menus are a festive celebration of international and local creations influenced heavily by what nature freely provides. Line-caught fish from surrounding waters, the highest quality grass-fed beef from local farms, flavorful organic fruits, herbs and vegetables from nearby farmers—the best of Mother Nature is deftly woven and spun by Guacalito’s team of noteworthy chefs to entice and engage every discerning palate in a multitude of ways. Naturally, every experience is complemented by formidable wine lists as well as ample offerings of artfully delicious cocktails crafted by astute mixologists.
A Memorable Sharing Experience: Fresh seafood paired with stunning views of the Emerald Coast. La Terraza offers spectacular views overlooking Nicaragua’s Emerald Coast and Manzanillo beach.
Throughout the day, innovative dishes are made with local Nicaraguan ingredients, including organic Nicaraguan grass-fed beef, produce grown by nearby farmers and fish caught by fishermen in the neighbouring villages of Gigante and San Juan del Sur.

Mukul itself was built in a manner that respects the environment with the use of rainwater catchments, regional materials, timber from sustainable forests, non-toxic paints and energy-efficient windows, and an ongoing gray-water program. Even the central aspect of Mukul—a grand palapa—is an example of the Pellas family’s sustainability ethos. Enormous tree trunks were needed to build the first oval-shaped palapa of the region, but attaining them would mean cutting down a large quantity of the property’s trees. Instead, the vision was realized by gathering reclaimed hurricane wood from the Atlantic coast nearly 400 kilometers away—a complex and expensive process, but one that upheld the destination’s environmental responsibility.
This peaceful, beach-side hangout adjacent to La Terraza offers lite bites, cocktails, lounge music, board games and daily vintage rum tastings. Guests can enjoy custom Flor de Cana rum cocktails while watching the sunset in this serene location.
Set along the white sand beach and featuring an enormous 200-year-old Ceiba tree adjacent to its entrance. Upon entering the spherical three-meal restaurant, guests are invited to sip on fresh coconut juice, handcrafted cocktails and local delicacies at the dramatic bar built around a second historic Ceiba tree, which gracefully stretches through the roof.
New activities and amenities include beach volleyball and tennis, a youth soccer area, cornhole, a playground with kids’ pool, an adults-only beachfront infinity pool and a coco shack bar, serving fresh smoothies and juices. Unforgettable programming in the wilds of nature include ritual sunset bonfires underneath a canvas of stars, pop-up events with local celebrity chefs.
